@misohungry easy thai chicken rice in rice cooker! 🇹🇭🍚 we were following a recipe but my mom just started free styling half way thru lol! it turned out super delish and was sooo easy to make! recipe from my fave Thai cook on YouTube @กินได้อร่อยด้วย! Even tho my mom started free styling half way thru we used this recipe as a base! Ingredients | Chicken Rice • 2 cups uncooked jasmine rice • 1.75 lbs chicken • 2.3 cups water or chicken broth • 1/2 tbsp salt • 1 tsp sugar • 3 tbsp neutral oil • 2 tbsp shallot (minced) • 2 tbsp garlic (minced) • 2 tbsp ginger (sliced) Ingredients | Chicken Rice Sauce • 2 tsp Birds Eye chili (minced) • 2 tsp pickled garlic (minced) • 1.5 tbsp ginger (minced) • 2 tbsp Thai soybean paste • 1 tbsp palm sugar • 1 tbsp + 1 1/2 tsp rice vinegar (ideally tamarind juice if you can find it) • 2 1/2 tbsp light soy sauce • 1 tbsp pickled garlic juice • 1 tbsp black sweet soy sauce Instructions: • Rinse jasmine rice until under cold water until it runs clear. Drain. • In rice cooker (on sauté setting) or skillet, sauté garlic, shallot, ginger in hot oil until fragrant. Add rice, salt, stir for a few mins to mix in aromatics. • Transfer to rice cooker, add chicken thighs (making sure they don’t sit on top of each other). Pour water/broth over. Cook on regular rice setting. • In a bowl, mix chili, garlic, ginger, soybean paste, sugar, vinegar, light soy sauce, sweet soy sauce for sauce. Adjust taste. • Once the rice cooker finishes cooking, allow it to rest for a few minutes before opening the lid. • Remove the chicken from the rice cooker. Fluff rice. • Serve chicken over rice with sauce. When time is short but flavour is essential, this Thai Chicken & Rice tray bake delivers pure comfort. With tender chicken, fragrant jasmine rice, and creamy coconut milk infused with red curry paste, it’s a one‑pot wonder that transforms simple ingredients into a vibrant family meal. Finished with fresh vegetables and crunchy peanuts, it proves that low effort can still mean high satisfaction.


🥖 Ingredients

For the tray bake

4 chicken breasts, cubed
4 tbsp red Thai curry paste
1 lime, juice only
300 g (1.75 cups) jasmine rice
400 g (14 oz) coconut milk, 1 tin
200 ml (1 cup) boiling water
100 g (1 cup) mange tout
100 g (0.5 cup) baby corn, halved
Sea salt and freshly ground black pepper, to taste

To garnish

40 g (0.3 cup) peanuts, chopped
1 lime, cut into wedges
Coriander leaves (cilantro)


🍳 Method

1. Preheat the oven to 180℃ fan/350F, 200℃/400F or Gas Mark 6.
2. Mix chicken, curry paste, lime juice, rice, coconut milk, and boiling water in a baking dish. Season with salt and pepper, cover with foil, and bake for 25 minutes.
3. Remove foil, add mange tout and baby corn, then bake uncovered for 10 more minutes.
4. Scatter over peanuts, lime wedges, and coriander leaves before serving warm.


💡 Recipe Tips

• Swap mange tout for green beans or sugar snap peas if preferred.
• Jasmine rice gives the best texture, but any white rice works.
• Adjust spice level by adding or reducing curry paste depending on your taste and the brand’s heat.
