@ciaobellaeats Weeknight dinner episode 3: lemon basa with spicy tomato butter beans 🐟🫘 This takes under 30 minutes to put together INCLUDING prep time! I’m a sucker for a quick, low effort meal and this one really delivers. Not to mention the 35g protein and 12g fibre per portion 🎉 Ingredients (serves 2) 250g basa fillets Oil Butter Juice of half a lemon 400g @boldbeanco Queen butter beans 1 shallot, sliced 2 cloves garlic, diced 1 chilli, diced Sun-dried tomato paste Tomato paste 75ml single cream Handful of parsley, diced Method: 1) melt some butter and oil together on medium heat in a large pan and squeeze in the juice of half a lemon 2) pat dry your basa fillets with paper towel and place them in the pan. Season with salt and pepper. Cook for 8 minutes on both sides, basting with the lemon butter until cooked through. 3) remove the basa from the pan, add in the shallots garlic, chilli and salt and cook for two minutes. 4) add in both the tomato pastes and cook for a further 5 minutes on a medium high heat before adding the whole jar of butter beans, simmer for 3 minutes. 5) stir in the single cream and parsley and serve. #quickmeals #weekdaydinner #weekdaymeals #easyrecipe #easymeals ♬ Can I Call You Rose? - Thee Sacred Souls

• Handful of parsley, diced 🌿
